SUMMARY The Demi Chef de Partie assists the Chef de Partie in managing a specific section of the kitchen, ensuring high-quality food preparation and presentation. This role involves preparing ingredients, cooking dishes, and maintaining the cleanliness of their section. The Demi Chef de Partie is responsible for ensuring the smooth flow of kitchen operations in their assigned area and may step in for the Chef de Partie when needed.
KEY RESPONSIBILITIES
- Assist the Chef de Partie in preparing and cooking dishes for the assigned section (e.g., sauces, grill, pastry).
- Ensure all ingredients are prepared and ready for service in a timely manner.
- Cook dishes according to the established standards of quality, presentation, and taste.
- Follow recipes and instructions accurately while contributing to the development of new dishes.
- Maintain cleanliness and hygiene standards in the kitchen, including your workstation and equipment.
- Monitor stock levels for your section and communicate with the Chef de Partie or Sous Chef regarding any shortages.
- Help train and mentor junior kitchen staff and apprentices.
- Assist in the proper storage and handling of food, ensuring that health and safety standards are met.
- Step in to assist in other sections of the kitchen when necessary to support smooth operations.
- Handle any guest or kitchen issues that arise during service with a calm and professional attitude.
- Properly handle and store ingredients, ensuring freshness, quality, and adherence to food safety standards. Follow portion control guidelines.
- Work closely with other members of the kitchen team to coordinate timing and ensure smooth service during meal periods.
- Ensure good understanding of menu, including ingredients, preparation methods, and any special dietary requirements or allergens.
- Assist with inventory control, including stock rotation, checking for expiration dates, and notifying superiors when ingredients are running low.
- Any other reasonable duties assigned by management.
